    I would love to know more about the great steakhouses in Vegas, especially off-strip and underrated ones. I've been to Lawry's Prime Rib and make it a point to go once every trip. SW is on June's agenda.

    I haven't tried Old Homestead in Vegas, but would love to know how it compares to the ones in NYC and AC.

    My top 5 would be:
    1. Sage (Aria)
    2. Vic & Anthony's (Golden Nugget)
    3. Joes Steak and Stone Crab (Caesars forum shops)
    4. Andiamos (the D)
    5. Craftsteak (MGM)

    Sage was literally the best meal I've ever had in my life. Wagyu New York strip, came with potato pave, heirloom carrots and truffle.

    Vic & Anthony's has a great deal with their distinctive dining menu. It also has the old school Vegas feel, but really has only been there since Landys bought them

    I ate at the Vic & Anthony's at Golden Nugget in Atlantic City, it didn't impress me, then again, it's not Vegas. I will definitely consider Sage in June (we're definitely hitting Aria).

    I'm looking for a nice steakhouse that's off-strip. Has anyone been to Golden Steer?

    It's indeed old school. Good spot. But caveat emptor: I haven't been in years. Nice thing about steakeries, though, is that presuming they know what to do with good beef, it comes down to wine, ambience, service. GOBS of commendable steakeries in Vegas. We've long been Charlie Palmer fans but that doesn't mean we don't like Craftsteak or Delmonico or whatever. USDA Prime, rare, good company ... good times.

    Steak is very easy cook properly. The list of steakhouses that do it poorly is probably shorter than the list of steakhouses that do it well.

    Things that really set a steak restaurant apart are the atmosphere, service, and sides/desserts..

    So, you should really ask what steak restaurants have the best service, atmosphere, and sides/desserts.

    It's not that simple. It's why I try to avoid that whole "best" mania as much as possible. (Shadow Creek is the consensus without-a-doubt top-rated course in Vegas; I don't know that it is my favorite play, that's a different animal. It's a play I love, though.) That we choose Charlie Palmer a few more times over the others might seem to indicate that that's our favorite, but I don't often look at these things in that fashion. I'm not trying to be obtuse about this, but so many of these decisions are about timing, mood. But, yes, I'd always highly recommend CP. If you are out and about, Hank's at GVR is a winner.

    I can appreciate that answer. Ambiance is always a big thing while enjoying a meal. I will definitely try Charlie Palmer and I will look into Hank's.
