i will get more responses on the other board but I trust your opinion more, so help me choose.

Mr. K. has finally been persuaded that a birthday (his) trip to Vegas is a good idea and I want to plan a nice dinner. Seafood, steak, or sushi. On the strip or close. Moderate to expensive. Not Nobu.

He likes Stack and I agree that it's good but it's not spectacular.

Front runners are Herringbone and Cut. Opinions?

    Stripsteak is good value.

Craftsteak is more high end ambiance.

Herringbone is good but I don't see it as a special birthday dinner kind of place. It is pretty casual.
Cut on the other hand is an over the top experience and great dining.
I have been there for two different friends birthday dinners and everyone was happy.Bring your platinum card.
Consider Prime at Bellagio for steaks and try for the patio as a special birthday spot.

Plenty of others on the board are more qualified to comment on Sushi than me.

Cut service is great but my filet was horrible. I think Prime is much better.

CUT is still top notch. I was there last week and they were doing construction on the water fountain right outside CUT's door. They were changing the seasonal atrium display from butterflies to statues of giant women wearing dresses made out of giant flowers. They added a big bridge over the fountain. Hopefully construction noises won't be a factor if you go.

Why not do both? When we go to Vegas for birthdays, we usually do two or three nice dinners and mix it up.

Last time we hit up Carbone... I think it was great... if only I could remember better. :)

At Cut today. They've finished the construction.
Here's a pic I took of the bridge-and-giant-lady thing they built. I got about half of it in the photo.
You can see what I meant when I said it was literally right outside the door of the restaurant.
