Even restaurants on the coasts fly in fish from other places. And if the place is busy, the fish is probably fresh regardless. Nobody wants a food poisoning issue so they're pretty careful in places like Vegas where they could probably dump a whole shipment of bad fish and it's petty cash compared to the risk.
