I have been to Carbone 3 times now, and packed every time. Twice we couldn't even get in as reservations were packed and full, even for Noir / RFB players

this is disappointing. we go every trip to fill up on uni and sake.

this leaves a bit of a hole in the MGM roster...

I haven't heard that about Carbone either, it's packed every time I go and the reviews are fantastic. The only knock I had on it was the time I went solo, it's definitely not a menu designed for a single diner (but you can say that about quite a few places).

I wouldn't be shocked if they bring in Akira Back or someone along those lines to do a casual-ish sushi place, but that space is just too big (and remember that they already had one failed concept there in Shaboo). I'm not sure what they could really add that Aria is currently missing, they have pretty much every major cuisine covered and more lounges/bars than they know what to do with; hell, they just cut Alibi back from 24/7 after Gem Bar opened. And it's not like I could see them opening up a food court. Maybe a Mediterranean place to try to pull people away from Milos?

I mean, stranger things have happened (not to mention, every time I like a TV show it gets canceled) but I'd be truly surprised if a place that was packed constantly, and was an outpost of a NYC restaurant group that was trying to build a brand, couldn't make it work. I'd see Jean-Georges or Bardot closing before Carbone, both of which I like a lot, but also always seem a bit quiet.

If carbone is turning down mansion and noir players I wouldn't worry about them going anywhere. Been there 2 times now excellent each time

You need to quit talking to homeless guys and nickel slot players.

It's no more expensive than any other top tier restaurant in Vegas and the food is outstanding.
